About The Owners
Amanda Waskiewicz-Elick and Michael Elick
Michael Elick has a long history with the golfing industry. He began his career at just 16 years old at Aurora Hills Golf Course and later worked at both Willis Case and City Park Golf Courses. His journey then led him to downtown Denver, where he spent years managing bars and restaurants. After relocating to Northern Colorado, Michael became General Manager at the iconic Boot Grill in Loveland.
In addition to his hospitality background, Michael is an active part of Colorado’s live music scene—both as a solo performer and with the Woodland Park Band. That love for music carries over to the Highland Meadows Grill, where you can expect live music events throughout the year.
Amanda and Michael’s goal is to create a place to gather. Whether you live in the surrounding community or a nearby town, this is a place worth visiting. Keep an eye out for what is going on at Highland Meadows Grill!
